1 lb boneless skinless chicken breasts
3 cans Great Northern Beans
1 med onion
3 cloves minced garlic (not pictured)
7-8 oz chopped green chiles
2 t cumin
1 t oregano
1 1/2 t cayenne pepper
1 1/2 t salt
1 C water
14 oz chicken broth
a) adding chicken to 1 cup of water and 1/2 cup chicken broth and heating for 4 hours on high in crock pot (chicken will fall apart easily)
b) boiling chicken in water for 45 min, then shredding with a fork
Next, add all ingredients to chicken and either: a) heat in crock pot on low for about 2 hours b) heat on stove over low heat for about 2 hours
Makes around 4 2-cup servings at 390 cal ea
